The pork used is "Barley-Finished Three-Breed Pork," a Canadian brand of pork.The meat is marinated in a special sauce made by mixing apple juice and Worcestershire sauce, then cooked at a low temperature for about 3 hours to cook it through, and finally finished in a frying pan and salamander to give the surface a crispy and fragrant finish.
